Afternoon Snack | GIMME SOME PANCAKES!!!
The wife and I woke up this morning with a craving for pancakes. Being as I’m in the middle of Operation Badonkadonk, we didn’t want to make up the standard butter and oil greasy spoon, diner pancakes. So we found this lighter version on allrecipes.com by a lovely lady named Shirley Smith. The apple sauce and cinnamon give the cakes a delicious, seasonal flavor. And if you top with a little sugar free maple syrup, you get a fall endulgence without breaking the calorie bank.
Also at the end I posted a clip of Lewis Black ranting about IHOP– A personal fav. For some reason I could only find it dubbed to anime?

Apple Cinnamon Pancakes

- 2 cups dry pancake mix
- 1 teaspoon ground cinnamon
- 2 eggs
- 1 cup applesauce
- 1 teaspoon lemon juice
- 1/2 cup milk
- In a large bowl, stir together pancake mix and cinnamon. Make a well in the center of the pancake mix. Add the eggs, applesauce, lemon juice and milk; stir until smooth.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
Serves 4 | 235 calories per serving!
